Long time no see! I feel like it’s been forever since I’ve blogged (okay, it’s only been a week but that’s a long time in the blogging world!). I don’t know if there’s just something in the air but I’ve been crazy sick lately (some of you may or may not recall that I had a bad case of pneumonia not to long ago!). No really, I literally spent 85% of last week in bed surrounded by the piles of medicine my doctor gave me (hence the lack of blog updates!).
I don’t know about you but I HATE being sick (especially since it doesn’t happen to me that often!). Whenever I’m really sick all I want to do is lay in bed, watch tv and sleep (which doesn’t sound all that bad but it definitely doesn’t help me be productive in anyway!). It’s crazy to think that not just three weeks ago, I was roaming around sunny Florida (although it was unseasonably cool) enjoying the Epcot International Flower and Garden Festival!
I’ve said this before but the Epcot International Flower and Garden Festival is absolutely breathtaking and I think it’s something ALL Disney lovers should experience in person. (Honestly, you don’t even have to be a huge Disney fan to appreciate all the beauty the Epcot International Flower and Garden Festival has to offer!).
This year’s Epcot front-entrance topiary garden, “Welcome Spring Fun, Food and Flowers,” was by far one of my favorites! Can we talk about how adorable these topiaries are? The level of craftsmanship that goes into these Epcot International Flower and Garden Festival topiaries just amaze me so much!
The Epcot International Flower and Garden Festival ears were so cute (I’m a sucker for Figment merch!). I just realized that I didn’t include these ears in my latest Disney World Haul (whoops), but I definitely rocked them while at the Epcot International Flower and Garden Festival!
I absolutely loved the Fantasia topiaries! I don’t know about you but I could watch Fantasia and Fantasia 2000 all day long!

Seriously, these photos don’t even do the Epcot International Flower and Garden Festival justice! I loved that they updated the Beauty and the Beast topiary this year (how gorgeous is Belle’s face?!).
Topiaries of the Three Caballeros and “Cruz”, a new character who will appear in Cars 3, were among some of this years new additions to the Epcot International Flower and Garden Festival!
Since I focused so much on all of the different topiaries when I shared with you all last year’s Epcot International Flower and Garden Festival recap, this year I decided to discuss some of the yummy food available at the festival. Speaking of food, hands down my favorite snack was the Beijing-Style Candied Strawberries (I had them at least five times during my trip!) In fact, I loved the Beijing-Style Candied Strawberries so much that I found a recipe online and made my own at home (they turned out AMAZING!).
Some of my other favorite snacks at the Epcot International Flower and Garden Festival included (in order of photo): the Spicy Chicken Lettuce Wrap, the Warm Wild Berry Buckle with Pepper Berry Sorbet, the Vegetable Spring Rolls, the Beef Tenderloin Tips (with Mushroom Bordelaise Sauce, Whipped Potatoes and Garden Vegetables), the Freshly Baked Lemon Scone with Crème Fraîche and Mixed Berries, the Macaron Chocolat Framboise, the Seared Pork Tenderloin (with Mushroom Ragoût, Spring Vegetables and Fingerling Potatoes) and Frushi (which is Fresh Pineapple, Strawberry and Melon rolled with Raspberry Coconut Rice, sprinkled with Toasted Coconut and Whipped Cream on the side!).
The Epcot International Flower and Garden Festival is definitely tied with the holidays as one of my FAVORITE times to visit the Disney Parks (it doesn’t help that Epcot is also my favorite park!).
